Chunky Salsa Recipe for Canning

- 1/4 cup lime juice
- 1/4 cup white vinegar
- 1 tablespoon salt
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder
Instructions:
- Prepare the ingredients: Wash and chop the tomatoes into chunks. Chop the bell peppers, onions, jalapenos, and garlic. Remove the seeds from the jalapenos if you prefer less heat.
- Combine ingredients: Combine all the chopped ingredients in a large pot.
- Simmer: Bring the mixture to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
- Blend: Use an immersion blender to blend the mixture until it reaches your desired consistency. You can leave it chunky, or blend it smoother.
- Canning: Wash and sterilize your jars and lids. Fill the jars with the hot salsa, leaving 1/2 inch of headspace. Wipe the rims of the jars clean. Place the lids on the jars and tighten the rings.
- Process: Process the jars in a boiling water bath for 20 minutes. Make sure the water completely covers the jars.
- Cool: Remove the jars from the boiling water bath and let them cool completely. You should hear a popping sound as the jars seal.

- Adjust the spices: Add more or less chili powder, cumin, oregano, or black pepper to suit your taste.
- Vary the vegetables: Experiment with different types of peppers, like poblano or serrano. You can also add corn, black beans, or other vegetables to create different variations.
- Label and store: Once the jars are completely cooled, label them with the date and store in a cool, dark place. Chunky salsa will last for up to a year in the pantry.
