Blackberry Jam Recipe for Canning

Summer is the perfect time to enjoy the bounty of fresh blackberries! And what better way to preserve those juicy berries than by making a delicious and easy blackberry jam? This recipe will walk you through the steps of making a classic blackberry jam that you can enjoy all year round.

Ingredients:

  • 4 cups ripe blackberries
  • 4 cups granulated sugar
  • 1/4 cup lemon juice

Equipment:

  • Large pot
  • Measuring cups and spoons
  • Canning jars and lids
  • Jar lifter
  • Water bath canner
  • Ladle
  • Rubber spatula

Instructions:

Step 1: Prepare the Blackberries

  • Wash and drain the blackberries thoroughly.
  • Remove any stems or leaves.
  • Place the blackberries in a large pot.

Step 2: Crush the Blackberries

  • Use a potato masher or a fork to crush the blackberries until they are mostly broken down.
  • You can leave some larger pieces for a chunkier jam.

Step 3: Add Sugar and Lemon Juice

  • Add the sugar and lemon juice to the pot.
  • Stir to combine.

Step 4: Cook the Jam

  • Bring the mixture to a rolling boil over medium heat, stirring constantly.
  • Reduce the heat to low and continue to cook for 15-20 minutes, or until the jam thickens.
  • To check for thickening: Place a small amount of jam on a chilled plate. If it sets up and doesn't run, it's ready.

Step 5: Prepare the Jars

  • While the jam is cooking, sterilize the canning jars and lids in boiling water for 10 minutes.
  • Drain the jars and lids upside down on a clean towel.

Step 6: Fill the Jars

  • Carefully ladle the hot jam into the sterilized jars, leaving 1/4 inch of headspace.
  • Wipe the rims of the jars clean with a damp cloth.
  • Place the lids on the jars and screw on the bands fingertip-tight.

Step 7: Process the Jars

  • Place the filled jars in a water bath canner, making sure the water covers the jars by at least 1 inch.
  • Bring the water to a boil and process for 10 minutes.
  • For higher altitudes, adjust processing time according to your altitude.

Step 8: Remove and Cool

  • Carefully remove the jars from the canner using a jar lifter.
  • Let the jars cool completely on a wire rack.

Step 9: Test the Seals

  • Once the jars are cool, gently press down on the center of the lid. If the lid doesn't move, it is sealed.
  • Store sealed jars in a cool, dark place for up to a year.

Tips:

  • For a richer flavor, add a pinch of cinnamon or a few drops of vanilla extract to the jam while cooking.
  • Use a jelly bag to strain the jam for a smoother texture.
  • Store your jam in the refrigerator once opened.

Enjoy your delicious homemade blackberry jam on toast, biscuits, or even ice cream!
