Blackberry Jam Recipe for Canning
Summer is the perfect time to enjoy the bounty of fresh blackberries! And what better way to preserve those juicy berries than by making a delicious and easy blackberry jam? This recipe will walk you through the steps of making a classic blackberry jam that you can enjoy all year round.
Ingredients:
- 4 cups ripe blackberries
- 4 cups granulated sugar
- 1/4 cup lemon juice
Equipment:
- Large pot
- Measuring cups and spoons
- Canning jars and lids
- Jar lifter
- Water bath canner
- Ladle
- Rubber spatula
Instructions:
Step 1: Prepare the Blackberries
- Wash and drain the blackberries thoroughly.
- Remove any stems or leaves.
- Place the blackberries in a large pot.
Step 2: Crush the Blackberries
- Use a potato masher or a fork to crush the blackberries until they are mostly broken down.
- You can leave some larger pieces for a chunkier jam.
Step 3: Add Sugar and Lemon Juice
- Add the sugar and lemon juice to the pot.
- Stir to combine.
Step 4: Cook the Jam
- Bring the mixture to a rolling boil over medium heat, stirring constantly.
- Reduce the heat to low and continue to cook for 15-20 minutes, or until the jam thickens.
- To check for thickening: Place a small amount of jam on a chilled plate. If it sets up and doesn't run, it's ready.
Step 5: Prepare the Jars
- While the jam is cooking, sterilize the canning jars and lids in boiling water for 10 minutes.
- Drain the jars and lids upside down on a clean towel.
Step 6: Fill the Jars
- Carefully ladle the hot jam into the sterilized jars, leaving 1/4 inch of headspace.
- Wipe the rims of the jars clean with a damp cloth.
- Place the lids on the jars and screw on the bands fingertip-tight.
Step 7: Process the Jars
- Place the filled jars in a water bath canner, making sure the water covers the jars by at least 1 inch.
- Bring the water to a boil and process for 10 minutes.
- For higher altitudes, adjust processing time according to your altitude.
Step 8: Remove and Cool
- Carefully remove the jars from the canner using a jar lifter.
- Let the jars cool completely on a wire rack.
Step 9: Test the Seals
- Once the jars are cool, gently press down on the center of the lid. If the lid doesn't move, it is sealed.
- Store sealed jars in a cool, dark place for up to a year.
Tips:
- For a richer flavor, add a pinch of cinnamon or a few drops of vanilla extract to the jam while cooking.
- Use a jelly bag to strain the jam for a smoother texture.
- Store your jam in the refrigerator once opened.
Enjoy your delicious homemade blackberry jam on toast, biscuits, or even ice cream!
